Due to a broken foot i couldn't test the Tortuga 873 enough to give an opinion yet.
Just had it out for 20 minutes on my last trip to Brittany, but then the wind got stronger and it was time for wavesailing.
But my plan for the next weekend is going wind- or e-foiling with it.

Don't know about the 790, but it should be the twin of the Infinity 76.
Both wings SS/Moses designed by Tony Logosz, with the special reverse profile wingtips.

Also have you tried the Moses 790 wing?
One in our favourite windsurf shop. Well its a Simmer branded one. Its a lot lighter than the Slingshot 76.
Moses website has some new stuff for 2020 including a very wide 1100 Onda and some new windsurf race foils. Also a T115 Windsurf/Surf/Wind board.

Tyson Poor on the 96 litre 6' 8" JP SUP foil board. He is probably using the NP Glide M slim wing @ 1300 sq cm.

The same board can also be used with a Duotone (or other) wing, so the choice of propulsion is up to the rider. In this video, the board used is 114 litre - so more similar to the 115 litre JP 7' SUP foil board. The foil used is about 1500 sq cm and the other board's foil is 2400 sq cm.

Benjamin Tillier wingfoiling with a 4m Duotone wing and 2000 sq cm foil quoting 10 to 12 knots. The board is a modified North kite race board (probably about 90 litres).
The foil is a surf style foil, and the mounting point is further forward than the original deep tuttle box. The original box position on these race boards works with a windfoil type foil (as shown by Gunnar Biniasch on page 1 of this thread). Gunnar thinks the North deep tuttle may not survive foiling. The original construction of these boards was very light (6kg or less).
